Roast Chicken with Honey Mustard Sauce

While this dish does take a long time to cook, it allows the honey mustard sauce made from scratch to thicken into a delightful sauce. Can be served accompanied by rice and/or salad, although this can be a meal in and of itself.

Ingredients:

3 tablespoons spicy mustard
3 tablespoons honey
2 teaspoons red chili powder
1/2 teaspoon soy sauce
5-6 chicken legs
4 large carrots
2 quartered onions
2-3 bell peppers, sliced in big chunks

Preparation:

Mix the mustard, honey, chili powder and soy sauce. Line a casserole dish with the carrots, onion and bell peppers. On top of the bed of vegetables, place the chicken legs and cover them evenly with the honey mustard sauce. Bake on a medium heat for 3 hours, basting every 30 minutes and turning every hour.

Yield: 2-3 portions
