Thai Taco Salad

This is a quick and light meal that takes about 15 minutes to prepare and cook. The red curry paste adds a lovely flavour with the sour cream, and is a good option if you don’t feel like spending a great deal of time on dinner or lunch.

Ingredients:

3 tablespoons of Thai red curry paste
3 tablespoons olive oil
1/2 cup coconut milk
2 large onions, diced
2 green chilies, diced
1 kilo ground beef
4 tablespoons soy sauce
3 fresh tomatoes, diced
1 head of lettuce, diced
sour cream

Preparation:

Fry the red curry paste with the olive oil until fragrant and then slowly add the coconut milk, stirring constantly until you have a thick sauce. Add the onions and green chilies and continue to stir for about 2 minutes or until the onions are fragrant. Mix in the ground beef and the soy sauce and stir constantly until the meat is fully cooked and the sauce is well dispersed throughout.

When serving, mix the meat in separate bowls with the desired amount of tomatoes, lettuce and sour cream. Stir and enjoy!

Yield: 4-5 portions
